Put 100g baby potatoes on to boil. Combine 75g of smoked mackerel, 1 tbsp of green curry paste, 3 chopped spring onions and a handful of chopped coriander. Divide into 2 small patties and fry in 1 tsp of sunflower oil. In a bowl shave half a cucumber into ribbons and dress in ½ tsp of sesame oil, a squeeze of lime juice and some torn mint leaves. Serve with 1 tsp drizzle of chilli sauce with the drained baby potatoes.
