Peel and cook 200g sweet potato in boiling water. Drain and mash with 1tsp olive oil and some flat leafed parsley and black pepper. Spray a pan with olive oil spray and fry two eggs along with a pinch of chopped red chilli. Serve on top of 200g sweet potato mashed.
